Butter Chicken

This recipe is easy and can simmer all day in a slow cooker…


  • 2 tsp(10 ml) each ground ginger, curry powder
  • 1 tsp(5 ml) each ground cumin, cinnamon, coriander
  • 1 medium onion, finely chopped (about 1 12 cup/375 ml)
  • 1 1/2 lb (675 g) boneless, skinless chicken breast, cubed into 2 inch (5 cm) pieces
  • 2 tbsp(30 ml) melted, unsalted butter
  • 2 cups (500 ml) diced tomatoes (you can add any tomato sauce)
  • 1 tbsp (15 ml) lime juice
  • 1/2 cup (125 ml) 0% fat, plain Greek yogurt
  • 1/4 cup (50 ml) chopped cilantro to garnish (I omit this as cilantro and I don’t get along)


This comes to approx. 300 calories for a 250 gram serving.

  1. In small bowl combine all spices, set aside
  2. Place onion in slowcooker, add chicken; sprinkle with spices then top with butter and diced tomatoes
  3. Stire, cover and cook on high for about 4 hr or on low 6-8 hrs. (I find every slow cooker varies..so adjust time accordingly)
  4. Stir in lime juice and yoghurt before serving. Garnish with cilantro
