Lemon Cranberry Muffins

With Coronavirus being discussed at length on radio, tv, and being forced to stay at home as a result, we all have to find things to do. I found myself cleaning out my fridge and fridge freezer yesterday. I ended up finding some homemade cranberry sauce I had frozen. What to do? I decided to try a recipe today… I made these a little earlier this week…made these today versus for Thursday treat day. Ok let’s call it Wellness Wednesday. This treat is not overly sweet!!

I am not sure how long we have to be confined to the house because of Coronavirus or Covid 19… I expect I will be trying more recipes and with ingredients I find in my pantry or freezer versus going to the grocery like I would normally do. Let’s pray this virus ends as quickly as it started.

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup large flake rolled oats
  • 1/4 cup of coconut sugar
  • 1 tsp baking soda
  • 2 tbsp baking powder
  • 1/4 tsp salt
  • 1/3 cup lemon juice
  • 1 tbsp lemon zest
  • 1 cup unsweetened cashew milk
  • 1 tbsp pure vanilla extract
  • 1/3 cup unsweetened applesauce
  • 1 1/4 cups fresh cranberries

Instructions:

  1. Preheat oven to 375 degrees F
  2. Mix all the dry ingredients 
  3. Add all the wet ingredients except the cranberries (if you have fresh).  
  4. Mix well, then fold in cranberries
  5. Put into a muffin tray….makes 12
  6. Bake for 18-20 minutes until a toothpick inserted into centre of muffin comes out dry.
  7. Take out of oven, cool and enjoy!

Annette’s Review:

First of all, I already knew I was modifying and used homemade cranberry sauce which had a lot of fluid.  I end up reducing the amount of unsweetened apple sauce to about 1/4 cup given the fluid from the cranberry sauce.  I also decided to increase flour by 2/3 cup of flour.  I had enough batter to spoon into a 12 muffin tin and it made nice sized muffins.  Definitely not sweet and felt it could have used more fruit…so next time will follow instructions and use cranberries (probably frozen ones). 

I also think I would have amped up the lemon as didn’t taste it much.  I will try this again with these modifications.  I still find my date muffins were the best that I made last week.
