Here is a recipe I have had for over 15 years and have baked multiple times over the years. I am sure there are lots of Chocolate Chip cookie recipes out there but what I like about this one is I mix it all in one bowl. The lazy way of making cookies..is my way! No need to cream sugar in one bowl and mix dry ingredients in another bowl…feel free if you want to.. This also kills time before Grey’s Anatomy starts. Enjoy!!
Ingredients:
- 3/4 cup becel (or butter)
- 1 1/4 cup light brown sugar
- 2 Tbsp milk (subsitute almond/cashew milk etc)
- 2 Tbls vanilla
- 1 egg
- 1 3/4 cup flour
- 1/4 tsp salt or less
- 3/4 tsp baking soda
- 1 1/2 cups chocolate chips
Instructions:
- Preheat oven to 350 degrees
- Mix all ingredients (if you want cream sugar/butter/egg/milk/vanilla and then add dry ingredients)
- Use an ungreased sheet, I tend to use my stone bar pan made (by Pampered Chef)
- Bake for 8-10 minutes (I find my gas oven takes longer)

These are easy to make and my boys never leave any for me. That said, I do find them fairly flat and wished they puffed up more. I think it depends on your baking soda, so make sure it is fresh. Also I use Roger Flour, which has no additives, or bleach etc.
I will be trying some other cookies in the near future..
