Welcome to the launch of Live Laugh Connect!! I have been blogging since 2018 under the name Live Life with Laughter with an obscure domain name.. https://survivinglife166053185.wordpress.com. For you non-techies, the domain is what you would put in google. Now you can find me easily with Livelaughconnect.com. I adjusted the name as Live Life with Laughter is already taken…and it’s not me. Honestly it took me awhile to come up with a blog name…so many good ones are taken.

I figured I would launch my site with a recipe to celebrate. Yup first up is A Tiramisu cake!!

Fairly easy to make especially if you have an espresso pot and some liquor.

Tiramisu Cake

Ingredients:

  • 5 eggs
  • 500 g of Marscarpone cheese (usually 1 tub)
  • 1 to 1.5 packages of pavesini cookies (lady fingers work as well)
  • 1 cup espresso coffee (you can use regular coffee in a pinch)
  • 2 tbs cocoa powder
  • various liquors-kahlua, cognac, coffee liquors, vermouth, frangelico, amaretto

Filling: 

 Separate eggs.  Beat egg yolks and sugar until mixed and then fold in the marscapone cheese. Add 1 tablespoon of cognac. (you can substitute this with another tasty liquor) In a separate bowl, whip the whites at high speed and fold into above mixture.

Cookie Layers: 

Let espresso cool to room temperature. Place coffee in a shallow bowl and add a dash of various liquors as desired.  I typically like to drink my booze versus eat it…so I prefer not to make it tooooo boozy..just enough to add flavour.   Suggest you add some liquor and take a shot but I can’t guarantee your results.

Dip cookies into coffee until wet, but not soggy.  Completely line the bottom of a 9 inch by 13 inch rectangular glass pan with wet cookies. (You can also use a springform pan as I show in the pictures above. Be sure to line the bottom and line the sides)  Pour in a layer of filling to completely cover the cookies. Place another layer of wet cookies in the opposite direction to bottom layer.  Place another layer of the filling.  Basically alternate wet cookies with filling til you fill the pan you are using. 

Lastly sprinkle with chocolate shavings to decorate.  Refrigerate overnight before serving.

Depending on sizes you cut, it can serve 10-15 possibly more.  Don’t ask me the calories because I am sure it is more than my daily calorie count allows for…   You have to treat yourself sometime.  Time to indulge!
