Thursday Treat night! The state of affairs in the world today is absolutely frightening! I am still on the hunt for TP and trying to use all the stuff I have in my pantry so I don’t have to go to any stores. This Covid 19 has everyone on edge. My son said someone coughed at work and was sent to get tested for the virus.
I have had a box of dates sitting in my fridge for a few months and wanted to use them up. I thought what to make? I ended up making Date muffins. I can’t even remember what possessed me to buy dates…
Ingredients
- 1 cup of milk (I used cashew milk)
- 1 egg (beaten)
- 1 Tsp vanilla
- 2 cups flour (all purpose)
- 1/2 teaspoon salt
- 1 tbsp baking powder
- 2/3 cup sugar
- 1/2 cup walnuts chopped (I didn’t have any and used cashews)
- 1 cup of dates (chopped)
- 5 tbsp butter (melted
Instructions:
- Preheat oven to 400 F
- Mix milk and egg and add vanilla extract in a mixing bowl
- Sift together the dry ingredients, including sugar
- Add to milk and egg mixture and mix until well moistened.
- Fold in nuts and dates, then the melted butter, mixing just enough to blend
- Bake in preheated oven for 15 to 18 minutes

Well, these were easy to make. The recipe I found recommended using walnuts but I used cashews as that is all I had on hand. Hardest part of the recipe was chopping the nuts and the dates. I chopped those up and quickly mixed it all together. Made exactly 12 muffins. They browned up nice and were done in about 15-16 minutes. I loved how they puffed up. They were delicious! Yummy!!
