Blueberry & Strawberry Coffee Cake

I like trying new recipes and found this Blueberry Coffee Cake.  I am not really good at following directions and tend to make it my own and substitute things if I am out of anything.

I tried this recipe from Once Upon a Chef..

Prep time = about 45 minutes for me

Cook Time=40 minutes

Ingredients:

Streusel Topping

  • 6 tbls packed brown sugar
  • 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 4 tbls unsalted butter, cold and cut into 1/2 inch chunks (given I am lactose intolerant, I used vegan becel)

Cake

  • 2 cups all-purpose flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1-1/2 tsp vanilla extract
  • 1 tsp packed lemon zest, from 1 lemon (okay I was lazy & zested a little and added 1/2 tsp of lemon juice)
  • 1/2 cup milk (I used almond milk)
  • 2 cups fresh blueberries (ok I only had 1 cup of fresh blueberries and threw in a cup of chopped frozen strawberries)

Instructions:

Make the streusel topping.  Combine the brown sugar, flour, cinnamon, and salt in a small bowl. Using your fingers, mix until no lumps of brown sugar remain.  Add in the butter, I couldn’t stand using my fingers so I used a fork until it was in a crumbly state. Refrigerate until ready to use.

Preheat oven to 375 degrees F.  Use middle rack in oven.  Grease a 9-inch square pan (I used a round pan).

In a medium bowl, whish together the flour, baking powder and salt. Set aside.

In the bowl of an electric mixer, beat the butter and granulated sugar until creamy, about 2 minutes. Add the eggs one at a time, scraping down the sides of the bowl and beating well after each addition. Beat in vanilla extract and lemon zest.

Gradually add the flour mixture alternating with the milk, beating on low speed to combine. Add the berries to the batter and fold gently in with a spatula until evenly distributed.

Put the batter into the greased pan and spread evenly. Sprinkle the streusel topping evenly over the batter.

Bake for 40-45 minutes.  Until golden brown & a toothpick comes out clean.

Bake this & your house will smell divine….

For me, it took a little longer to cook with my gas range, it was about 55 minutes.   The streusel and berries make it and it’s not overly sweet.

It was delicious with coffee.   Definitely would repeat it…
